📝 Ingredients:
For Rice:
– 300 g Gautam Basmati Rice
– 2 Liters Water
– Salt (as required)
– 2 Tbsp Ghee
– 1 Tsp Oil
– 1 Bay Leaf
– 2 Green Cardamoms
– 1 Black Cardamom
– 1 Inch Cinnamon Stick
– 4 Cloves
For Chicken:
– 3 Tbsp Oil
– 2 Tsp Ghee
– 2 Peeled Potatoes
– 3 Green Cardamoms
– 1 Black Cardamom
– 4 Cloves
– 1 Inch Cinnamon Stick
– 1 Bay Leaf
For Marination:
– 600 g Chicken
– Salt (as required)
– ½ Tsp Turmeric
– 1 Tbsp Chili Powder
– 1 Cup Yogurt
– 1 Tbsp Ginger-Garlic Paste
– 1 Large Fried Onion
– ½ Cup Tomatoes
– Water (as required)
– Mint Leaves for garnish
📌 Instructions (Summary):
– Fry the potatoes with spices.
– Marinate the chicken with yogurt and spices.
– Cook the chicken until tender.
– Boil the rice halfway with spices.
– Layer rice and chicken, then garnish with fried onions and mint.
Wash rice and soak for 15–20 mins.
Boil water with whole spices and salt.
Add rice and cook 80% done. Drain and set aside.
Cook the vegetables:
Heat oil/ghee, sauté onions till golden.
Add ginger garlic paste, cook for 1 min.
Add veggies and sauté 2–3 mins.
Add tomatoes, curd, spices, salt. Cook until veggies are soft and masala thickens.
Layering biryani:
In a pot or handi, layer vegetable masala at the bottom.
Add a layer of cooked rice.
Top with mint, coriander, fried onions, and saffron milk (if using).
Repeat layers if needed.
Dum cook:
Cover tightly. Place on low flame for 15 mins or bake at 180°C for 15 mins.
Serve hot with raita, pickle, or salad.
